BAKED ZUCCHINI FRIES WITH HOMEMADE GARLIC AIOLI
Ingredients
1 cup of gluten-free breadcrumbs
1 egg
2 zucchinis
juice of a lemon
2 tbsp of avocado oil mayo
1 garlic clove
2 tsp of extra virgin olive oil
Recipe
Cut zucchini into sticks and pat dry (the drier the zucchini the crispier it’ll get!)
In a small bowl whisk 1 egg and in a second bowl add your bread crumbs
Dip each zucchini into the egg mixture and coat each one in the bread crumbs
On a sheet pan evenly place your zucchini and bake at 360 degrees for 25 minutes
In a small bowl, combine your avocado oil mayo, olive oil, garlic clove, lemon juice, salt and pepper for your homemade garlic aioli & ENJOY!
