BAKED ZUCCHINI FRIES WITH HOMEMADE GARLIC AIOLI


Ingredients

  • 1 cup of gluten-free breadcrumbs

  • 1 egg

  • 2 zucchinis

  • juice of a lemon

  • 2 tbsp of avocado oil mayo

  • 1 garlic clove

  • 2 tsp of extra virgin olive oil

Recipe

  • Cut zucchini into sticks and pat dry (the drier the zucchini the crispier it’ll get!)

  • In a small bowl whisk 1 egg and in a second bowl add your bread crumbs

  • Dip each zucchini into the egg mixture and coat each one in the bread crumbs

  • On a sheet pan evenly place your zucchini and bake at 360 degrees for 25 minutes

  • In a small bowl, combine your avocado oil mayo, olive oil, garlic clove, lemon juice, salt and pepper for your homemade garlic aioli & ENJOY!
