CRISPY SALMON ARUGULA SALAD BOWL


Ingredients

  • Atlantic Salmon

  • 2 cups of arugula

  • 1/2 cup of chickpeas

  • 1 baby cucumber

  • 1/2 cup of sweet potatoes

  • Hummus

  • Sesame seeds

Recipe

  • Cut your salmon into bite size pieces and marinate in soy sauce and let it sit for 15-20 minutes

  • Once marinated air fry salmon at 350 for 24 minutes

  • Pre heat your oven to 350 degrees and bake you chickpeas on a sheet pan seasoned with olive oil, salt, pepper, paprika, and garlic powder for 30 minutes

  • Cut your sweet potatoes into cubes season with olive oil, garlic powder, thyme and air fry at 350 for 30 minutes until crispy golden brown

  • In a salad bowl, add your arugula, baked chickpeas, roasted sweet potatoes, cucumbers, and salmon

  • Top it off with some sesame seeds and hummus & ENJOY!
