Almond butter energy bites


Ingredients

  • 2/3 cup almond butter

  • 2 cup oats

  • 12 dates

  • 1/4 cup dark chocolate chips

  • 1 tsp chia seeds

  • 1 tbsp hemp seeds

  • 1/4 cup maple syrup

  • 2 tsp vanilla extract

  • 1 tbsp protein powder

Recipe

  • In a small bowl soak your dates in warm water for about 5 minutes (this allows the dates to soften and it’s easier for us to digest)

  • In a skillet add your oats and let it brown for about 4 minutes (don’t burn them!)

  • Once your dates are done soaking add them into the food processor with your oats, almond butter, vanilla extract, and protein powder

  • After pulsing for about a minute you will see the mixture begin to thicken

  • Add your dark chocolate chips, hemp seeds, and maple syrup and finish pulsing

  • Once you are done, add your mixture into a bowl and start forming small bite size pieces

  • Roll each ball into a mix of chia and hemp seeds for that extra crunch

  • Once you are finish, place them on a baking sheet with parchment paper and let it sit in fridge overnight

  • Enjoy!
