Almond butter energy bites
Ingredients
2/3 cup almond butter
2 cup oats
12 dates
1/4 cup dark chocolate chips
1 tsp chia seeds
1 tbsp hemp seeds
1/4 cup maple syrup
2 tsp vanilla extract
1 tbsp protein powder
Recipe
In a small bowl soak your dates in warm water for about 5 minutes (this allows the dates to soften and it’s easier for us to digest)
In a skillet add your oats and let it brown for about 4 minutes (don’t burn them!)
Once your dates are done soaking add them into the food processor with your oats, almond butter, vanilla extract, and protein powder
After pulsing for about a minute you will see the mixture begin to thicken
Add your dark chocolate chips, hemp seeds, and maple syrup and finish pulsing
Once you are done, add your mixture into a bowl and start forming small bite size pieces
Roll each ball into a mix of chia and hemp seeds for that extra crunch
Once you are finish, place them on a baking sheet with parchment paper and let it sit in fridge overnight
