BAKED CHICKEN THIGHS WITH ROASTED SEASONAL VEGETABLES
Ingredients
Organic chicken thighs
2 large carrots
3 stalks of celery
4 potatoes
Extra virgin olive oil, oregano, paprika, garlic powder, cumin, salt and pepper
Recipe
Preheat oven to 355 degrees
Clean and remove all excess fat on your chicken thighs under warm water
In a small bowl add to your liking salt, pepper, oregano, paprika, garlic powder, and cumin and mix (this will be your homemade spice rub)
In a sheet pan add your chicken thighs and coat with olive oil
Chop up all your vegetables and place them in the sheet pan
Coat everything in olive oil and add your spice rub on all the chicken thighs and vegetables
Once the oven is preheated add your sheet pan to the oven and let it bake for about 45 minutes
For the last 5 minutes broil your chicken and vegetables to get a nice caramelized coat & ENJOY!
