BAKED CHICKEN THIGHS WITH ROASTED SEASONAL VEGETABLES


Ingredients

  • Organic chicken thighs

  • 2 large carrots

  • 3 stalks of celery

  • 4 potatoes

  • Extra virgin olive oil, oregano, paprika, garlic powder, cumin, salt and pepper

Recipe

  • Preheat oven to 355 degrees

  • Clean and remove all excess fat on your chicken thighs under warm water

  • In a small bowl add to your liking salt, pepper, oregano, paprika, garlic powder, and cumin and mix (this will be your homemade spice rub)

  • In a sheet pan add your chicken thighs and coat with olive oil

  • Chop up all your vegetables and place them in the sheet pan

  • Coat everything in olive oil and add your spice rub on all the chicken thighs and vegetables

  • Once the oven is preheated add your sheet pan to the oven and let it bake for about 45 minutes

  • For the last 5 minutes broil your chicken and vegetables to get a nice caramelized coat & ENJOY!
