KALE CHICKEN SALAD


Ingredients

  • 2 cups of baby kale

  • 2 mini cucumbers

  • hand full of cherry tomatoes

  • half an avocado

  • 1 organic chicken sausage (my favorite brand is Bilinski’s)

  • 1/4 cup extra virgin olive oil

  • juice of a lemon

  • 2 tbsp nutritional yeast

Recipe

  • massage your kale with a little lemon juice and olive oil and let it sit for 5 minutes (this will help break down the tough, fibrous parts of the kale)

  • Cut your chicken sausage into slices and grill for 5-8 minutes

  • dice your cucumbers, tomatoes and slice your avocado

  • In a small bowl, add 1/4 cup extra virgin olive oil, juice of a lemon, and 2tbsp of nutritional yeast and mix

  • Combine all ingredients & ENJOY!
