KALE CHICKEN SALAD
Ingredients
2 cups of baby kale
2 mini cucumbers
hand full of cherry tomatoes
half an avocado
1 organic chicken sausage (my favorite brand is Bilinski’s)
1/4 cup extra virgin olive oil
juice of a lemon
2 tbsp nutritional yeast
Recipe
massage your kale with a little lemon juice and olive oil and let it sit for 5 minutes (this will help break down the tough, fibrous parts of the kale)
Cut your chicken sausage into slices and grill for 5-8 minutes
dice your cucumbers, tomatoes and slice your avocado
In a small bowl, add 1/4 cup extra virgin olive oil, juice of a lemon, and 2tbsp of nutritional yeast and mix
Combine all ingredients & ENJOY!
