Greek mediterranen pasta salad
Ingredients
Gluten-free pasta (you can use any pasta you want as your base - I like to also use quinoa, rice, farro, and orzo)
1 cucumber
1 cup tomatoes
1/2 cup corn
1/2 cup broccoli
1/3 cup kalamata olives
1/4 cup chives
Garnish with fresh parsley
Dressing:
1 tbsp Dijon mustard
1/3 cup olive oil
2 tbsp apple cider vinegar
juice of 1/2 a lemon
1 tsp nutritional yeast
salt & pepper to taste
Recipe
Boil your water and add your pasta for about 7 - 10 minutes depending on the box instructions
Dice your cucumbers, tomatoes, and kalamata olives
In a pan, grill your corn and broccoli
Once the pasta is done boiling, drain the water and place your cooked pasta in a serving boil
Add your chopped vegetables, and finish it off with chopped chives and parsley
Mix your dressing in and enjoy!
