Greek mediterranen pasta salad


Ingredients

  • Gluten-free pasta (you can use any pasta you want as your base - I like to also use quinoa, rice, farro, and orzo)

  • 1 cucumber

  • 1 cup tomatoes

  • 1/2 cup corn

  • 1/2 cup broccoli

  • 1/3 cup kalamata olives

  • 1/4 cup chives

  • Garnish with fresh parsley

Dressing:

  • 1 tbsp Dijon mustard

  • 1/3 cup olive oil

  • 2 tbsp apple cider vinegar

  • juice of 1/2 a lemon

  • 1 tsp nutritional yeast

  • salt & pepper to taste

Recipe

  • Boil your water and add your pasta for about 7 - 10 minutes depending on the box instructions

  • Dice your cucumbers, tomatoes, and kalamata olives

  • In a pan, grill your corn and broccoli

  • Once the pasta is done boiling, drain the water and place your cooked pasta in a serving boil

  • Add your chopped vegetables, and finish it off with chopped chives and parsley

  • Mix your dressing in and enjoy!
